September Follow the development of the maturity of the grapes by regularly taking grape samples in order to determine the date of the harvest. Around 15th September the harvest commences at Les Vignobles YON for the white grapes. October The main harvest starts and the whole team of Les Vignobles YON moves into action. The wines selected for ageing are put into French oak barrels to develop. November The wines from the new harvest are just commencing their life with strong colours and diverse aromas, which will produce an elegant wine from Les vignobles YON.
